Grow Your Own Fresh Tomato Salsa
Lesson Description:
Students will grow tomatoes, such as the beefsteak variety, onions, cilantro, hot green or red chilies (i.e. jalapeno). After harvesting vegetables and herbs, students will combine ingredients to make their own garden fresh tomato salsa.
Eco-Fact: According to the USDA, if you eat 100 more food calories a day than you burn, you’ll gain about 1 pound in a month. That’s about 10 pounds in a year.
Procedure:
Students will grow tomatoes, such as the beefsteak variety, onions, cilantro, hot green or red chilies (i.e. jalapeno). After harvesting vegetables and herbs, students will combine ingredients to make their own garden fresh tomato salsa.

- Combine all the ingredients in a bowl. Taste and adjust seasonings if necessary.
- Makes: About 2 cups
Adaptations:
Optional: If you and your kids like a spicier salsa, add 1 seeded and finely chopped hot chili pepper (i.e. jalapeno).
Younger students will need help with chopping vegetables and herbs.

Materials Needed:
- Cutting board and knife
- Medium mixing bowl
- Large spoon
- Measuring cups and spoons
Ingredients:
- 2 large ripe tomatoes, chopped
- ½ large onion, minced
- 1 1/2 TB fresh lime juice
- 1/4 c chopped cilantro
- Salt and pepper to taste
- Tortilla chips and chopped fresh vegetables for dipping
