Grow Your Own Herb Vinaigrette

Lesson Description:
Students will grow a variety of mild herbs (i.e. parsley, basil, or dill) or strong herbs (i.e. rosemary, thyme, or tarragon). After harvesting the herbs, students will combine ingredients to make their own herb vinaigrette salad dressing.

Procedure: 
  1. In the mixing bowl, combine the vinegar (or lemon juice), salt, pepper and herbs. Slowly (just a few drops at first) whisk in the oil. This is important – if you add the oil all at once, the vinaigrette will not emulsify, or hold together. 
  2. You can start to add the oil in a slow steady stream about halfway through.
  3. Toss with your favorite salad!
  4. Makes: About ¾ cup
Adaptations: 
  • Substitute ¼ cup fresh lemon juice for the vinegar 
  • Add a tablespoon honey 
  • Add a tablespoon of minced onion 
  • Add a small clove of garlic, minced

Materials Needed:
  • Small mixing bowl
  • Whisk 
  • Measuring spoons and cups 
  • Cutting board and knife

Ingredients:
  • ½ cup extra virgin olive oil 
  • 3 TB cider vinegar
  • Salt and pepper
  • For your herbs, it depends on the variety. Try about ¼ cup of milder herbs (i.e. parsley, basil, or dill) or 1 tsp of stronger herbs (i.e. rosemary, thyme, or tarragon). Tear up with your hands or chop. - A fresh garden salad for your homemade dressing!
